Wave Race 64 (N64)

Yet another first party Nintendo title, that gets very little love - and it's shame, because at the time, this game was super impressive. 
If you ever wanted to do a case study, of how water physics in video games have evolved, this is a good place to start, because it pretty much invented the whole concept.
